Bokchoy with Crispy Fried Garlic 🍃🧄 Let’s do a quick garden harvest and cook up some greens 👩🏻‍🌾 If you’re looking for a delicious way to serve your leafy veg, this ones for you!  Ingredients  2 bunches bokchoy (I grew mature bokchoy but baby bokchoy that you usually find in store works perfect! I actually prefer it tbh) 6 cloves garlic, finely chopped 2 tbsp veggie oyster sauce (usually mushroom based)  1 tsp sugar  1/8 tsp white pepper  1 tsp cornstarch 1/3 cup water Method: 1. Thoroughly wash your bokchoy (especially if it’s organic and homegrown lol). You can choose to separate all the leaves or simply slice down the middle and keep them as big halves.  2. Bring a pot of water to the boil and add in a splash of oil. ❓WHY you may ask❓Well when I was younger, my mum showed me this hack. So if you add the tiniest bit of oil in before blanching your veg, it turns and stays SUPER green and luscious, it actually makes a huge difference esp if you care about presentation/if you’re serving guests. Try it out for yourself! Anyway back to the method… once boiling, add all your bokchoy and blanch for about 1 minute until stems are just tender.  3. In the meantime, heat some oil in a frypan or small saucepan. Add in the garlic and fry until golden brown and crispy. Drain and set aside.  4. In a separate bowl, whisk together the oyster sauce, sugar, pepper, cornstarch and water. Add into the frypan you fried the garlic in and bring to a boil. It should darken and thicken immediately. Turn off the heat. 5. Pour the sauce onto the bokchoy and garnish with the crispy fried garlic.
