CHORIZO-SPICED CAULI BURRITO BOWLS the dinner dilemma hits different as a mom. I used to not mind if dinner wasn’t ready until 9:30 but that’s not going to work if eating as a family every night - which is very important to us. So I’ve been spending the past year or so trying out different ways to make dinner time easier. But it’s not just about the time at which it’s served, I also don’t want to sacrifice the way I like to eat - plant-forward and delicious. Plus I love to cook so figuring out ways to make it more manageable make it even more important. These burrito bowls look complex, like there is so much going on, and there kinda is. But a loaded, flavor-packed bowl like this is my favorite way to eat. So while I made quite a few different elements - rice, stewed black beans, cabbage slaw and the spicy roasted cauliflower. But each element is super simplified and I make each one during small pockets of time I have throughout the day - so that when dinner rolls around it’s easy to pull together.

For the cauliflower… 2 medium heads cauliflower cut into florets (don’t throw out the center stems/stalks, dice them up and throw them in with the florets). In a small bowl combine 1/4 cup olive oil, 3/4 teaspoon salt, 1 teaspoon ground cumin, 1/2 teaspoon chipotle powder (for heat, or more to taste), 2 teaspoons dried oregano, 2 teaspoons smoked paprika, 2 teaspoons granulated garlic. Toss oil/spice mixture with florets. Season with more salt and chipotle powder if needed. Roast on 2 large lined baking sheets for 20 minutes at 425 degrees. Flip and rearrange. Continue roasting until edges are started to char, another 10-20 minutes. Serves 4-6. #MomsofTikTok #dinneridea #vegetarian #plantbased #veganfood
