For stainless, heat it up first, and when it's hot, add the oil first, enough to cover the bottom thinly at least, then add your eggs or whatever else

tip: heat up the pan until you can sprinkle some water on it and they form moving bubbles. if the water starts bubbling and flying around the pan you know it’s hot enough to add a tablespoon of oil

When scrambling, fold the eggs, leave them alone. Then fold until they’re cooked again. Then repeat.
