But the problem is Costco “tenderizes” the meat, so technically it needs to be cooked well done to rid of bacteria. If they didn’t you could cook it rare.

nothing to do with age. They are grown and processed roughly same age for retail. The color actually has to do with how long it is direct exposure to flourescent lighting. Been in meat 15 yrs

Darker color also indicates more age on the sub primal prior to butchering. Dark cutters are more related to injury. Not just stress and lactic acid. 👍
