@nikittalouise1: Thai satay chicken skewers 😍 To make 4 skewers for 4 people you will need: 650g boneless chicken thighs diced ½ tin coconut milk 2 tbsp thai curry paste 2 tbsp smooth peanut butter 2 tbsp dark soy sauce 2 cloves garlic minced Juice ½ lime 4 skewers Optional garnish – fresh chilli, parsley, crushed peanuts To a bowl add the curry paste, peanut butter, soy sauce, garlic and a splash of the coconut milk. Mix well and then set half of the mixture the one side. With the remaining mixture add in the chicken and stir well until it is all coated. Cover and marinate in the fridge for at least 4 hours. Once the chicken is marinated split between the 4 skewers. Set the Woodfire to the grill setting on high for 10 minutes. Once it is ready add the skewers to the grill turning halfway through. Whilst that is cooking add your remaining marinade mixture to pan with the rest of the coconut milk & lime juice, stir well and warm through on a low heat until it starts to thicken. Once the 10 minutes is up switch the setting on the Woodfire down to low and cook for a final 7 minutes. Remove the skewers from the grill, pour over some of the sauce and top with the garnish if you are using it. I served them with some Thai jasmine rice & a fresh mango & carrot salad with the remaining sauce on the side to pour over the rice @Ninja Kitchen UK
