WELCOME TO STEWS FROM AROUND THE WORLD 🌍 this is part 40 and today we’re taking a trip to India, where we will be making some Kerala beef stew 🇮🇳 this is the season finale of stews from around the world but dont worry, season 2 will be coming back very soon, I hope you are all ready! let me know where you want me to go in season 2 (4) Stew: 2 tbsp coconut oil 1 cinnamon stick 2 whole cloves 3 green cardamon pods 1 red onion sliced 2 shallots sliced 3 garlic cloves finely diced Thumb of ginger finely diced 1 green chilli 500g beef shin diced 1 tbsp garam masala 400ml coconut milk 200ml water 1 medium potato diced 1 large carrot diced 100ml coconut cream 2 tbsp coconut poil 1 shallot sliced 3 dried red chillies 5 curry leaves  (1) Heat up a large stew pot and add 2 tbsp of coconut oil. Infuse the oil by adding the cinnamon stick, cloves and green cardamon pods. Infuse for 30 seconds on a medium heat, then add the onion and shallots, season with some salt. Cook for 5-8 minutes on a medium heat until soft and fragrant then add the ginger and garlic and cook for 2 minutes.  (2) Add the beef alongside the garam masala and mix very well. Now add the coconut milk and enough water to cover the beef. Bring to a simmer and cover and cook for 2 hours.  (3)
Now remove the lid and add the carrot, potato and coconut cream. Mix well and let simmer uncovered for 20 minutes to thicken the stew. In the meantime, in a separate frying pan, heat up 2 tbsp of coconut oil, then once hot add the shallot, chilli and curry leaves. Fry for a few minutes then remove add to the stew right at the end.
