@dansfoodforthought: Wrapped Up Burrito Series | Day 10 | Chicken Fajita Ingredients 4 skinless boneless chicken thighs, sliced 1 red, 1 yellow, 1 green capsicum, sliced 1 red onion, sliced Extra Virgin Olive Oil Seasoning Mix 1 tsp salt 1 tbsp sweet paprika, cumin powder, onion powder, garlic powder, dried oregano ½ tsp black pepper Guacamole 2 avocados Salt & pepper ½ tsp garlic powder Burrito 3 Flour tortillas Black beans, rinsed & drained Cheddar cheese, shredded Mayonnaise mixed with adobo peppers or sour cream Mexican Rice 1 cup long grain rice 1 ½ cups chicken stock 3 coriander stalks ¼ brown onion, finely diced 1 clove garlic, minced Method Preheat your oven to 170°C (340°F). Place the sliced capsicums & red onion onto a baking tray. Season with salt and pepper, then drizzle with olive oil. Toss to coat the vegetables evenly. Add the sliced chicken into a bowl & along with seasoning mix, drizzle with olive oil, then toss to coat the chicken pieces evenly. Place the seasoned chicken on top of the vegetables on the tray. Bake for 12 minutes, or until the chicken is cooked through and the vegetables are tender. Mash the avocados in a bowl until smooth or chunky. Add salt, pepper, and garlic powder to taste. Mix well. In a medium saucepan, heat a little oil over medium heat. Add the finely diced onion and minced garlic, and sauté until the onion is translucent. Add the rice and stir to coat. Add the chicken stock and coriander stalks. Bring to a low simmer, cover, and cook for 10 minutes. Turn off the heat and let the rice sit, covered, for another 5 minutes. Remove the coriander stalks and fluff the rice with a fork. Warm the flour tortillas in a dry skillet for about 30 seconds on each side, or until soft and pliable. Spread a layer of guacamole on each tortilla. Add a scoop of black beans and Mexican rice. Top with the chicken and vegetable mixture, shredded cheddar cheese, sour cream, and fresh coriander if desired. Roll then toast.
