Soup season is here… Loaded Baked Potato Soup. Recipe below ⬇️ * 1 pack bacon * 3 tbsp butter * 1 yellow onion chopped * 4 garlic cloves, minced * 1/3 cup flour * 2 1/2 pounds russet potatoes, peeled, diced into preferred size * 4 cups chicken broth * 2 cups milk * 2/3 cup heavy cream * salt to taste * pepper to taste * 1/2 tsp chili powder * 2/3 cup sour cream * Shredded cheddar cheese, chives, bacon for toppings Place bacon in soup pot until bacon is crispy. Remove bacon and set aside, leave the fat in the pot. Add butter, chopped onion and garlic, cook over medium heat until onions are tender and garlic is fragrant. Add flour and stir until smooth. Add diced potatoes to the pot with the chicken broth, milk, heavy cream, salt, pepper and chili powder, stirring well. Bring to a boil and cook until potatoes are tender and soft. Reduce heat, add sour cream half the bacon pieces. When complete, serve the soup topped with additional sour cream, bacon, cheddar cheese and chives. Feeds 4-6 people If you like your soup chunky, dice potato’s into larger pieces. If you want it smooth, blend or smash potato’s once they are cooked in the pot.
