FLUFFY RICOTTA LEMON PANCAKES  Serves: 4 Under 250kcal and 12g protein. One of my most made recipes from my cookbook, inspired by the mega pancakes at granger and co. Melt in your mouth soft, so fudgey, and seriously addictive whilst staying balanced. Pair with my chia seed compote for a nutritonal boost. Top with a drizzle of syrup or honey and even some yoghurt for extra protein. These can also be made in advance and heated up for ease, simply microwave or flash in a hot pan.  125 ml semi-skimmed milk 250 grams of ricotta cheese 2 large eggs (separated) 100 grams of plain flour 1 teaspoon baking powder pinch of salt 1 lemon, zest For the compote  400g frozen blueberries or any frozen fruit of your choice 1 heaped tbsp chia seeds  To serve
 1. Tip the frozen berries into a pan, heat the frozen blueberries until defrosted and bubbling, mix in the chia seeds and allow too simmer for 1 more minute then turn off the heat. Feel free to sweeten but I like this a little more tart.  2. Mix 2 tbsp honey or maple syrup with the juice of 1/2-1 lemon to taste. 3. Separate the egg yolks from the whites, keeping both. Whisk the egg whites until soft, white and fluffy and forming peaks.  4. Separate 75g of ricotta from the 250g pot and set to one side to use for later. Keep the remining ricotta and add to a large mixing bowl along with the milk and egg yolks to form a smooth batter. Gently mix in the dry ingredients (flour, baking powder, lemon zest and a pinch of salt). Fold the whisked egg whites into the batter. Then using a teaspoon, dollop little blobs of the remaining 75g of ricotta into the bowl and fold through 5-6 times, trying not to break the ricotta up. We want little surprise pockets when eating the pancakes. 5. Place a nonstick frying pan on medium heat and brush with a little oil. Dollop a 2 tbsp of batter into the pan. Cook for around 2-3 minutes on each side until golden and risen.  6. To serve, spoon over 1 tbsp of blueberry compote and drizzle over the lemon honey. #healthyrecipes #breakfast #pancakes
