Did you know that passion fruit was filled with starch? 🥹 Banana, potato, jackfruit and mango also contain high amounts of starch! Although commercial starch we use for cooking is usually made from corn, wheat, rice, tapioca and potato.  All the small rainbow bubbles you see in the video are single starch granules, and they look gorgeous under polarized light! Most fruits and vegetables store the energy they made by photosynthesis into starch, a type of sugar. This starch is mostly present in unripe fruits and is synthesized and temporarily stored in the chloroplasts and amyloplasts (specialized cells for starch storage) or for long periods in seeds, roots and tubers. In passion fruits, starch can be found in the flesh, also called mesocarp!  Purple passion fruit, named Passiflora edulis, is native from southern Brazil through Paraguay to northern Argentina but can also be cultivated in some parts of India. The commercial fruit production is mainly focused on yellow passion fruit (95% of commercial production) while purple passion fruit is produced at a smaller scale. Passion fruit is often consumed fresh for its pulp, seeds and juice or is used in food dishes.  The fruit is an excellent source of fiber, nutrients, vitamin C and A but also contain a good amount of antioxidants and flavonoids. It also have anti-inflammatory, anti-bacterial, anti-fungal and anti-aging properties!
