I make this grilled vegetable recipe once or twice a week and it usually turns out great! I start with whatever vegetables I have and cut them into small pieces generally about the size of my pinky. If it’s zucchini, I sometimes leave that larger because it gets very small after it grills for a while. As you might notice on this one, I used baby carrots I cut those about 4 to 6 times per carrot because it takes a lot longer to cook a carrot so make it smaller and it will cook through more quickly. I also use green peppers, red peppers, yellow peppers, I like to buy them at Costco so I always have some on hand. And then an onion, I always add an onion and if you can get a Vidalia onion all the better! After I cut everything up, I put it into a large bowl and toss it with some olive oil and some seasoning, salt pepper whatever you happen to have on hand. Then I heat a cookie sheet on my gas grill. Throw some olive oil on there first after the cookie sheet heats up and then toss the vegetables on there and stir them once every three or four minutes. I have the heat on medium high at this point and then I keep picking them up and moving them around so that they don’t get burnt completely on one side And then after I feel like they’re done, I use some oven mitts or hot pads and pick up the cookie sheet and slide it back into the original bowl and serve it. Of course leftovers can be refrigerated and they’re great for lunch or for throwing in soup the next day. I hope this is helpful and I hope you enjoy grilled vegetables sometime soon!
