Put the flattened dough inside a baking ring and press it firmly. Press against the sides as well. Repeat this step for all the balls of dough.   Let the dough rise again for 30 minutes or until it doubles in size.   Meanwhile, prepare the yellow cream by mixing the egg yolks, sugar, and vanilla sugar in a bowl for 1 minute. Add the cornstarch and 75 ml milk and mix until you have a smooth mixture.   Bring the remaining 500 ml of milk to a boil in a saucepan. Remove the pan from the heat and gradually add the milk-egg mixture while stirring.   Put the mixture back in the saucepan and cook it until it thickens, while stirring continuously. Transfer the yellow cream into a piping bag.   Fill the well-risen dough with the yellow cream.   Place the pastries in a preheated oven at 200 °C (390 °F). Bake for 10-12 minutes or until they turn color golden. Keep an eye on the baking time as every oven may vary. Allow the pastries to cool.   Finally, garnish the desserts with fresh fruit.   Tips:   If desired, you can replace vanilla sugar with vanilla extract. Adjust the amount of sugar to taste.
