WELCOME TO MEDITERRANEAN MADNESS 🍋☀️  my brand new summer series where I’ll be showing you how to make some of the best dishes the Mediterranean has to offer this is part 8 and today were taking a trip to Spain to make some Paella Valenciana 🇪🇸! An absolutely wonderful rice dish! Traditionally made with rabbit & chicken, this version only contains chicken! I hope you enjoy (1) 2 tbsp extra virgin olive oil  4-5 chicken wing pieces  1 runner bean cut up 1/2 cup butter/lima beans 1/2 cup tomato sauce/grated tomatoes 1/2 tbsp sweet paprika 1 tbsp saffron water 400ml water 1/4 tsp orange colouring (optional, I like the colour it gives) 1 sprig of fresh rosemary 125 grams arroz bomba (paella rice) (1) In a paella pan, heat up the olive oil until hot. Add the chicken and cook until well browned all over. Push to the edge of the pan, then add the butter beans and runner bean. Cook for a few minutes on a medium heat. (2)
Add the tomato sauce, smoked paprika and saffron water and mix very well. Cook for 1 minute, then add the water, food colouring if you want to and finally the rosemary. Taste and season with salt to your taste. Cover and cook for 30 minutes. This is to enhance the flavour of the broth. (3) Now after 30 minutes of cooking, remove the rosemary and taste again for salt. Make sure you’re happy with the salt levels, as this is the last time to season before we add the rice. Add 100ml more water (as you would have lost liquid during simmering. (4) You can also remove the chicken at this point, which helps cook the rice more evenly but I left it in. Add the rice into the pot and evenly distribute throughout the pan. Cook on medium high for 10 minutes, then reduce the heat to low and cook for a further 10 minutes until all the broth has evaporated. (5) Now for the hardest part, something that I am still learning aha! Turn up the heat to almost max until you hear the crackling sound. Allow to cook for about 2-3 minutes, until you get that socarrat! This will take practice, what you are looking for is a crispy/burnt layer on the bottom, it is genuinely the best part of the paella! Serve with some squeezed lemon and enjoy! #paella #spanishfood #mediterraneanfood #fyp
