Dry Chow Mein Noodles▪️1/2 Cup Avocado Oil, divided▪️ For the Stir Fry:▪️4 Cups Broccoli Florets (~2 Crowns)▪️1 Tbsp Avocado Oil▪️4 Cloves Garlic, minced▪️3 Tbsp Fresh Ginger, minced▪️1 Medium Carrot, sliced in thin half ovals▪️3 Scallions, sliced▪️ 1️⃣ Add the flank steak to a bowl with the rest of the ingredients for the marinade; mix together and marinate for at least 30 minutes in the fridge 2️⃣ Mix together the ingredients for the sauce and set aside 3️⃣ Boil the noodles in salted water according to package directions then remove them from the pot with a mesh spider strainer and set aside; bring the water back to a boil and blanch the broccoli for 1 minute then drain and set aside 4️⃣ In a large wok or pan preheated over medium-high heat, add 1 Tbsp oil along with the ginger and garlic; stir fry until fragrant (1 min) and then add the flank steak and stir fry until partially cooked through (1-2 mins); add the carrots and stir fry for 1 min, then add the broccoli and stir fry 1 more min 5️⃣ Re-mix the sauce with a spoon and add it to the wok or pan; stir fry 1-2 mins until it bubbles and thickens, then mix in the scallions and turn off the heat 6️⃣ In a separate medium pan, heat 1/4 cup avocado oil over medium heat until it reaches 350F; add half the noodles, arranging them in a ~1” thick patty, and pan fry for 5-7 mins until golden brown (the noodles will stick together once fried); flip with a spatula and pan fry for 2-4 mins until golden brown; remove from the pan, add 1/4 cup more oil, and repeat with the other half of the noodles 7️⃣ Turn the heat back on the stir fry to get it nice and hot, then serve it on top of the crispy noodles - enjoy! ⏲15 minute prep time + 30 minute inactive time + 30 minute cook time
