Stir frequently for 3-4 minutes until caramelizing. -Add tomato paste and cook while stirring for 3 minutes until the bottom is beginning to caramelize hard -Add flour and continue to cook while stirring 2 minutes -Add wine, stir and bring to a boil while scraping off the fond from the pan -Add shanks, bay leaf, rosemary sprigs, stock. Bring to a simmer. Season to taste. Cover and place in oven. -Cook for 90 minutes and check doneness with a fork. Add an additional 15 minutes at a time until desired doneness -Fry picked rosemary in avocado oil at 350 until the leaves stop bubbling. Season with salt.  -Serve shanks with strained jus, fried rosemary, and mashed potatoes. -Enjoy.
