COCONUT CHEESECAKE WITH WHITE CHOCOLATE #cheesecake #food #cake #Recipe #tasty #chocolate #tiktokfood #fy #fyp #foryou #foryoupage COOKIE DOUGH 150 g Maria biscuits 50 g almonds (roasted) 150 g unsalted butter CREAM MIXTURE 250 g mascarpone 150 g white chocolate 120 g granulated sugar 16 g vanilla sugar (2 packets) 500 g cream cheese 40 g cornstarch 30 g grated coconut 3 eggs (medium) TOPPING 50 ml heavy cream 125 g white chocolate Melt the white chocolate in a double boiler and let it cool. Grind the Maria biscuits finely in a food processor. Melt the unsalted butter in a saucepan over low heat. Using a food processor, grind the roasted almonds not too finely Place the finely ground Maria biscuits in a deep bowl. Add the almonds and melted butter. Mix together. Take a springform or baking pan and line it with parchment paper. Spread the cookie dough over it and press it firmly against the bottom (use the bottom of a spoon as a tool). Put the cookie dough in the refrigerator for a while. Put the mascarpone in a deep bowl and mix well. Add the melted (cooled) white chocolate and mix until smooth. Add the sugar and vanilla sugar, and mix well. Add the cream cheese in portions and mix well again. Sift the cornstarch over the bowl and mix. Add the grated coconut and mix until smooth. Put the mixer aside and use a spatula from now on. Break the eggs one by one over the bowl. Fold the egg into the cheesecake batter with a spatula. Spoon the cream cheese mixture over the cookie dough and spread it evenly. Place the coconut cheesecake in a preheated oven at 125 °C. Bake for 60 minutes or until the sides are firm and the center jiggles slightly. Turn off the oven and leave the coconut cheesecake in the oven for 1 hour. This prevents the cheesecake from collapsing or cracking. Remove the coconut cheesecake from the oven and cover it, placing it in the refrigerator. Preferably overnight, so the flavors can set in, and the cheesecake becomes firm. Bring the heavy cream to a simmer. Add the chopped white chocolate. Let it sit for 1 minute. Mix until smooth and let it cool slightly. Pour the white chocolate ganache on top of the coconut cheesecake. Cover the coconut cheesecake and let it chill in the refrigerator for 30-45 minutes or until the ganache is firm. Slice the coconut cheesecake into nice pieces. If desired, garnish with dollops of cream, grated coconut, chopped (roasted) almonds, and coconut balls.
