Ingredientes para ~12 yemas: 🔸40 ml de agua fría + 1,25 gr de alginato de sodio 🔸30 gr de mucílago de lino (= 4 cdas de lino remojadas en 120 ml de agua, cuelas el líquido una vez pasados unos 15 minutos) 🔸80 ml de agua + 8 gr de maicena + colorante alimentario amarillo (y si tenéis rojo, mejor, para darle un tono más realista) 🔸35 ml de leche de soja sin azúcar  🔸50 ml de agua 🔸Sal kala namak al gusto 🔸500 ml de agua + 5 gr de cloruro de calcio Instrucciones: 1️⃣ En recipiente mezcla el agua fría con el alginato de sodio hasta que se disuelva bien (no uses una varilla como hago en el vídeo) y déjalo reposar en la nevera. 2️⃣ En otro recipiente, mezcla el agua con la maicena y el colorante (puedes usar solo colorante alimentario amarillo pero si tienes un poco de rojo le darás ese tono naranjita del huevo). Pasa esta mezcla a una sartén/olla a fuego medio, remueve constantemente hasta que la textura sea densa. 3️⃣ Después añade esta mezcla en un bol junto con la leche, los 50 ml de agua restantes, el mucílago y la mezcla de alginato que tenías en la nevera. Mezcla hasta que la masa sea uniforme, si te ha quedado demasiado densa, puedes añadir un poquito de leche o agua. Añade la sal kala namak al gusto. 4️⃣ En un recipiente amplio, mezcla el agua con el cloruro de calcio hasta que este se disuelva. Y con una cuchara (mojada y con un poco de esa mezcla), forma las yemas de una en una, ve soltando cada yema en este líquido y déjalas dentro alrededor de 1 minuto (mientras más la dejes, más gruesa será la “piel”). Si tienes un biberón de cocina, puedes formar las yemas soltando el líquido directamente dentro del agua. 5️⃣ Pasada ese minuto, saca las yemas y pásalas a un recipiente con agua para que sellen.
