For as long as I can remember this cake was a STAPLE in my family.  “ Mexican Fruit Cake, unbelievably moist and oh so good!  Don’t let the term Fruit Cake deter you from reading any further!   This shouldn’t even be called a fruit cake, because the only fruit in it is pineapple…seriously!  I’ve seen a few people rename it a Pineapple cake, but it really isn’t that, either.  Unfortunately, the mere mention of the word Fruit Cake, and everyone scatters out of the room! “  This recipe has been in my family for years but I have no idea where or who it came from before my grandma got it from a friend of hers.  This cake is amazing and will be devoured. Breakfast after lunch treat and an after dinner dessert. It’s that good. The whole cake is good BUT, the cream cheese frosting is OUT OF THIS WORLD EASY!  Growing up I either wanted a Dairy Queen Ice Cream Cake, Angel Food Cake w/ Strawberries & Cool Whip or THIS CAKE, MEXICAN FRUIT CAKE!  Thanks mom for making my 40th birthday cake! Your the best. I adore you and I love making these memories with you!  #cake #homemade #mexicanfruitcake #yum #creamcheesefrosting #childhoodfave  INGREDIENTS Cake 2 cups all purpose flour 2 cups granulated sugar 2 eggs beaten 2 teaspoons baking soda 20 oz. can of crushed pineapple in natural juice. DO NOT DRAIN! 1 cup walnuts, chopped coarsely ( I SKIP THIS )  Frosting 8 oz. cream cheese, softened 2 cups powdered sugar 1 teaspoon vanilla 1 stick of butter, softened INSTRUCTIONS 1.Cake Batter 2.Preheat oven at 350 degrees 3.DO NOT USE A MIXER 4.Add eggs in a bowl and beat with a whisk. 5.Add the sugar and beat well. 6.Add the flour and baking soda. Use a wooden spoon. 7.Add the can of crushed pineapple (DO NOT DRAIN). 8.Add the chopped nuts 9.Stir together until well blended. 10.Grease and flour a 9
