Brown Sugar 2 Eggs (lightly beaten) 1 TBS. Lemon Juice 1/2 tsp. Vanilla 1/2 C. Pecans (chopped) 2 C. Flour 1 tsp. Baking Powder 1/4 tsp. Salt 1/4 tsp. Nutmeg 1/4 tsp. Cinnamon 1/4 tsp. Cardamom (optional) Preheat oven to 350°F. Prepare muffin tin or loaf pan. In a bowl cream together butter and sugar until smooth. Push the bananas through a mesh strainer into the creamed mixture and mix again. Add beaten eggs, vanilla, lemon juice, and nuts. Sift the dry ingredients into the wet ingredients and mix until everything is combined. Pour banana nut batter into muffin wells. Top muffins with chopped nuts. Bake for 30-35 minutes.
