 👩‍🍳 Method:  1. Prepare the salad ingredients by finely slicing the lettuce, cucumber, tomato and red onion. Optional: toss the red onion with the sumac (spice) in a small bowl and set aside.  2. Make the kofta mixture by combining the mince, onion, garlic, spices and parsley in a large bowl. Season generously with salt and pepper, then mix well until combined. For an even speedier option, feel free to use a pre-made spice blend or seasoning kits.  3. Warm the pita breads in the microwave for 20–30 seconds to soften slightly (this also makes them easier to separate). Carefully slice around the edge of each pita and gently peel apart the layers. If your pita breads are too thin to separate, simply keep them whole and press the mince directly onto the pita instead.  4. Spread ¼ of the mince mixture evenly onto one pita layer, then sandwich the second layer on top and press together firmly. Lightly grease a sandwich press with olive oil and cook for around 5 minutes, or until golden and cooked through.  5. Allow to cool slightly before filling with the salad ingredients, tzatziki and sauces of choice. Hot sauce also makes a great dipping sauce! If serving fewer portions, the uncooked pita and mince sandwiches can be assembled ahead of time and frozen until needed. Enjoy!  #kebab #fakeaway #easymeals #easydinner
