I would cook them before filling the inside (covered with tinfoil). Then fill them and cook more without tinfoil.

Fill the apples before you put the pastry on and just put the pastry all over and finish on the top. Raw pastry can give you an upset stomach.

We made those as children but we use raisins on the inside, (a Brit thing) and the apples are peeled. Apple dumplings.

you could put them in the oven while you're working on your saw at a lower heat like 325 or 3:15 then pull them back out and put the sauce in there and turn the heat up that might help but I also think you should cover it and parchment paper with a little tie Google put them in one of those turkey bag
