EASY MEALS FOR 2, EP 32 Coconut Chicken Red Curry Ingredients * 680g boneless, skinless chicken thighs, cut into bite-sized pieces * 1 tbsp neutral oil * 1/2 medium onion, thinly sliced * 3 cloves garlic, minced * 1 tbsp grated ginger * 3 tbsp Thai red curry paste * 1 can coconut milk, about 400 mL * 1/2 cup chicken broth or water * 1 tbsp fish sauce * 1 tbsp brown sugar * 1 red bell pepper, sliced * 1–2 tsp lime juice * Salt, as needed * Fresh basil or cilantro for topping * Sliced green onions, optional * Cooked jasmine rice, for serving Instructions 1. Sear the chicken. Pat the chicken thighs dry and season lightly with salt. Heat the oil in a large skillet over medium-high heat.
