Prepare Veggies: Sauté the garlic carrots, yellow squash, and corn kernels until soft. Puree them together in a blender or food processor until smooth. Make Cheese Sauce: Back in the pot, combine the pureed vegetables and milk and bring to a simmer. Gradually add the shredded cheddar and mozzarella cheese, stirring constantly until the cheese is melted and the sauce is smooth.
