Best eaten as soon as they’re done  Batter:  - 2 cups fine semolina  - 1 cup AP flour  - 1/2 tsp salt  - 1 tbsp yeast  - 1 tsp baking powder  - 1/2 tsp baking soda  - 1 tbsp orange blossom water  - 3 tbsp sugar  - 3 tbsp dry milk  - 3 1/2 cups water (start off with 3 cups, test your batter - If you feel like you need more water, add the rest in)  - Allow you batter to rest for 10 minutes (while you preheat your griddle to the highest setting)  Walnut Filling:  - 2 cups crushed walnuts  - 1 cup shredded coconut  - 2 tbsp sugar  - 2 tbsp cinnamon  - dash of nutmeg  Cheese Filling:  - 1 cup mozzarella, freshly grated  - 1 cup sweet cheese (akawi) or queso fresco  - 1/3 cup sweetened coconut flakes  Instructions:  - Add all of your batter ingredients into a blender - blend until smooth & allow to rest for 10 min while you preheat your griddle  - On a griddle (high heat) pour enough batter to create medium sized “pancakes”. Keep your eye on them, they shouldn’t take longer than 30sec- 1 min on the griddle - they cook fast since the batter is thin - Do not flip them - they’ll cook all the way through without flipping  - Allow your “pancakes” to cool before filling them / while they are cooling, mix together your filling ingredients  - Once cooled, add a generous amount of your filling (not too much, you don’t want your pancake to rip & not close properly) - pinch closed tightly !! Very important  - Fry on low- medium heat until they develop a nice color ( dip your Katayif in a bowl of simple syrup as soon as they come out of the fryer)! - To bake them: cover with ghee & pop under the broil in your oven just until they develop some color and develop a crisp exterior (depending on your oven it can take up to 5-10 min, keep your eye on them :,)  - Once they’re done baking, dip them in some simple syrup & serve !:)
