WELCOME TO CRUISING THE CARIBBEAN 🏝️ my brand new series showing you how to make some of the best dishes from the Caribbean. this is part 3 and today we’re taking a trip to Cuba , to make some Ropa Vieja 🇨🇺 (4) 800g flank steak  1 red onion quartered 4 garlic cloves 1 tsp cumin seeds 5 sprigs of fresh oregano 1 tsp salt 1 white onion 1/2 red bell pepper 1/2 yellow bell pepper 2 garlic cloves 2 tbsp tomato paste 1/2 cup red wine 1/2 cup passata 1 tsp ground cumin 1 tsp smoked paprika 3 sprigs fresh oregano 1/2 cup broth (from the beef) To serve: White rice Plantain (1) In a large hot cast iron skillet, heat up 1 tbsp of neutral oil. Once hot, add the flank steak and sear on all sides, then remove. Add the quartered onion chunks & garlic and sear for 1 minute. Now add to a large pot of boiling water alongside the steak, cumin seeds, fresh oregano & salt. Cover and simmer for 1 hour & 30 minutes, until pull apart tender. (2) In the same cast iron, add the onion and peppers, give it a good mix. Season with salt, mix well and saute for 5 minutes on a medium heat until soft. Now add the garlic and tomato paste, then cook for 5 minutes on a medium - high heat to unleash a deep tomato flavour. It’s absolutely fine if you see some of the paste sticking to the pan, that is what we want. (3) Now de-glaze with the red wine and let simmer for a further 5 minutes to cook out the alchohol. Now add the passata, the stock from the steak, cumin, paprika and oregano. Mix well and simmer on a low heat for a 10 minutes, then remove from the heat.  (4) Once the steak is fork tender, shred with a fork, then add to the sauce and mix well. Serve immediately with some white rice and plantain #ropavieja #comidacubana #cuba #caribbeanfood #fyp
