Homemade pretzel dogs. In a large bowl, add 1 cup warm water (roughly 110 degrees), 1 and a half tsp of active dry yeast, and 1 tsp of honey. Stir then let bloom. Once your yeast is activated, add 1 tbsp of melted butter, 1 tsp of salt, and 2 tbsp of honey. Stir then add 2.5 cups of flour - either bread or all purpose. Stir. Once your dough starts to stick to your spoon or spatula, knead with your hands - either in the bowl or on the counter. You may need to add a little more flour. You can always add more flour, but can’t take the flour out. Add slowly. Once your flour is fully incorporated and your dough is no longer sticking to your hands, place your dough in a greased bowl and cover with either Saran Wrap or a damp towel. Let rise for an hour or until doubled in size. After your dough has risen, punch down the air. Cut your dough in 8 even pieces. Roll each piece into a 20ish inch log and flatten. Wrap your hot dog like a mummy, making sure to pinch the ends. Bring a large pot of water to a boil. Once boiling, add 1/2ish cup of baking soda. Bring back to a boil and carefully add your pretzel dogs. Cook for 30 seconds, then place on a baking sheet. Top your pretzel dogs with melted butter and coarse salt. Bake at 425 for 17-20 minutes or until golden.
