The 12 days of Christmas, Day 2: Apple pie 🍎🥧 Ingredients: - 6 pink lady apples, diced - 1 tbsp lemon rind - 2 tbsp raw sugar - 2 tbsp unsalted butter - 1 cinnamon stick - 1 tsp ground ginger - 1/2 tsp ground clove - 500g plain flour - 250g unsalted butter, cold and cubed - 125g white sugar - 1/2 tsp salt - 2 eggs - 100ml very cold water 1. Add flour, sugar, salt and butter to a large bowl. Pinch the butter into the flour and gently rub between your hands until it looks like wet sand. Add 2 eggs and half the cold water then mix the until a dough forms, slowly adding more water if necessary, you want a smooth, tacky not sticky ball. Do not exceed 100ml. Leave covered in the fridge for at least 30 minutes 2. Melt butter and sugar together in a large pot or high walled frying pan on medium heat. Add apples, lemon rind + juice and spices, stirring to combine. Cook for 10-20 mins, stirring frequently until the apples are almost cooked through and have darkened in colour. Set aside to cool down 3. Half the dough and roll 5mm thick. Gently mould this half into your prepared (oiled and floured) pie tin. Fill with the cooked apples. Roll the other half of the dough to make a lid (the Criss-cross pattern is too hard for my small brain to explain). 4.
