Ingredients: * 1 lb ground chicken * 2 c chicken stock * 15 ounce can Navy beans- rinsed & drained * 1 packet ranch seasoning * 1/4 c Buffalo wing sauce * 1 c corn * 1/2 tsp onion powder * 1/tsp garlic powder * 1/2 tsp celery salt * 1/4 tsp salt * 1/4 tsp black pepper * 8 ounces cream cheese * 14.5 ounce can fire-roasted tomatoes * 1 T cilantro- chopped, plus more for garnish * 1/2 c Bleu cheese crumbles Directions: 1. Cook ground chicken in a large soup pot on medium heat. 2. Add chicken stock, navy beans, ranch seasoning, buffalo sauce, corn, and other seasonings. Stir to combine. 3. Add cream cheese and fire roasted tomatoes. 4. Add a sprinkle of cilantro and stir to combine. 5. Serve with bleu cheese crumbles, more cilantro, and crackers!
