How to make buffalo chicken Jalapeno poppers over direct heat 🔥 Classic Jalapeno poppers are great, but stuffing them with buffalo chicken dip just raises the bar that much more. Most of the time for poppers I’ll wrap them in bacon, but since we’re cooking these over direct heat on my @currentbackyard electric grill, I opted to cook the bacon first and dice it into the mixture. Definitely something I’ll be doing moving forward when making poppers this way 🌶️ Here’s the full recipe: Ingredients: • 5 slices of thick-cut bacon • 3-4 boneless chicken breasts, fileted • 8-10 jalapenos, halved & deseeded • 2 packages (16 oz.) cream cheese • 1 C shredded cheese • ½ C buffalo sauce • Salt & Pepper • Chives for garnish • Ranch for dipping   Procedure:   1. Preheat the grill to 375 degrees. Meanwhile, season the chicken with salt & pepper. Once preheated, add the bacon strips and chicken to the grill. Start checking the bacon every 5 minutes or so, flipping as needed for even cooking until the bacon has reached the desired doneness. Pull the chicken once it registers 165 degrees, flipping as needed. 2. Shred the grilled chicken and dice the bacon into bits. Next, mix both into a bowl with cream cheese, shredded cheese, buffalo sauce, and salt & pepper. Stir until all ingredients are well incorporated. 3. Take a halved jalapeno and spread the buffalo mix on the inside until it’s well stuffed. Repeat this process as needed, then place the buffalo chicken poppers on a wire rack and transfer to the grill. 4. Allow the poppers to cook until the jalapenos have softened, and the mixture is cooked through, ~30 minutes, then pull the wire rack from the grill. 5. Plate the poppers and garnish with chives if desired.
