WELCOME TO MEDITERRANEAN MADNESS 🍋☀️  my brand new summer series where I’ll be showing you how to make some of the best dishes the Mediterranean has to offer this is part 2 and today were taking a trip Morocco , to make some Kefta Tagine 🇲🇦 
I had this while traveling in Morocco and just had to come back and recreate this delighful dish! (4) Sauce: 1 brown onion diced 2 medium tomatoes grated 2 tbsp tomato paste 3 garlic cloves minced 2 tsp smoked paprika 1 tsp ground coriander 2 1/2 tsp cumin 1 tsp ginger 1 tsp turmeric 1/2 tbsp salt Meatballs 250g ground beef 80/20 fat 50g chopped parsley 1 tbsp black pepper 1 tbsp salt 1 tbsp smoked paprika 1 tsp ginger 1 tsp ginger 1 tbsp extra virgin olive oil (1) Heat up a large tagine pot or regular stew pot with 1 tbsp of olive oil. Add the onions, season with 1 tsp salt and cover immediately, cook for 10 minutes on a medium low heat! Add the tomato paste and minced garlic and cook for 5 minutes to unlock that deep tomato flavour! (2) Add the grated tomatoes alongside the paprika, coriander, cumin, ginger, turmeric, and salt! Mix well, bring to a simmer then cover for 10 minutes. Combine all the ingredients to make the meatballs, mix well and roll into equal sized balls.  (3) After about 20 minutes, add the balls to the pot and cover with a lid. Cook for 8-10 minutes covered, then remove and let simmer uncovered for a further 5 minutes to reduce the sauce! Serve with some fresh bread and enjoy :) #kefta #tagine #morocco #moroccanfood #fyp
