@jrwider: Baked Potatoes. Recipe: Scrub russet potatoes with water and a brush to remove dirt. Place on aluminum foil lined baking sheet and poke tops all over with a fork. Drizzle potatoes with olive oil and generously season with salt and rosemary leaves. Roast potatoes at 400 degrees for 1 hour. Slice potatoes lengthwise and push ends in to open. Serve with favorite accoutrements. I like butter, sour cream, S&P. My wife does them in an air fryer. Coat them in olive oil, poke a couple of holes and season with salt. The skin comes out nice and crispy.

So I’m guessing that you put oil on both sides of the potato along with the salt and rosemary turning them over. I’m assuming that it’s not just on side.
