Low Key Meals 🍛 Sambar 🍛 Save for later Ingredients Lentils * ¾ cup toor dal * 2 tbsp masoor dal * 1 tbsp chana dal Vegetables — in cooking order * Cauliflower, cut into florets * Eggplant, chopped * Okra, chopped * Moringa/drumsticks, cut into pieces * Onion, chopped * Curry leaves * Zucchini or any squash, chopped * Carrots, chopped * Tomatoes, chopped Spices & Other Ingredients * Oil * Mustard seeds * Dried red chilli * Turmeric powder * Hing (asafoetida) * Sambar masala * Tamarind paste * Salt, to taste * Water, as needed Directions 1. Cook the dal:     Dry roast the toor dal in a pan for a few minutes until aromatic. Add the masoor dal and chana dal, then wash everything well. Transfer the dals to a pressure cooker. Add water, salt, and turmeric. Pressure cook for 2–3 whistles, or until the dal is soft and completely cooked. 2. Start the tempering:     Heat oil in a pan. Add mustard seeds and dried red chilli. Once the mustard seeds begin to sputter, add cauliflower, eggplant, okra, and moringa. Sauté for a few minutes. Note: If making a large batch, you can sauté these vegetables separately and set them aside. Then start with the onions and add the sautéed vegetables back later. 3. Add onions and curry leaves and cook until the onions are slightly tender. 4. Add zucchini/squash, carrots, and tomatoes. Cook for a few minutes. 5. Add salt and hing (asafoetida). Mix well and cook for another couple of minutes. 6. Add the cooked dal along with sambar masala and tamarind paste. Add water as needed to adjust the consistency and mix well. 7. Pressure cook the sambar for another 1–2 whistles so the vegetables, dal, tamarind, and spices cook together and the flavors blend well. 8. Once the pressure releases, open the cooker and mix well.
