Neither. I feel like ribeye has too much fat/gristle. NY sirloin or filet all day for me.

A regular bone in ribeye seems more economical since you're paying more per lb because of the tomahawk bone

Reverse sear is to get the centre of meat closer to your desired finish temperature it will render small amount of fat with the centre at a higher temperature you don’t need to sear it as long
