These meal prep salad jars are my current go-to for during the busy work week, proving a convenient, nutritious, and delicious lunch idea (and did I mention EASY! 👀) Ingredients: 500g Chicken breast/ tenders* ~2 cups pasta (cooked) of choice** Pesto sauce of choice Heaps of veggies of choice I used a combination of spinach, tomatoes, baby cucumbers (and red onion) Parmesan cheese (to serve) + fresh herbs of choice (optional) Optional to turn pesto sauce into a “creamy” version: 1-2 tbsp pesto 1 tbsp Greek yoghurt 1 tbsp lemon juice 1/2 tsp Dijon mustard Salt/pepper to season *I crumbed mine myself using 1 cup Wholemeal bread crumbs + 2 XL eggs (to ensure crumb “sticks”). Feel free to use a convenience/ rotisserie option if this suits you best. Please also sub out for plant based option if you prefer this also. ** Suggestion: if making a plant-based version- use a pulse pasta for additional protein. Method: 1. Cook pasta as per back of packet instructions. Drain and then set aside. 2. Meanwhile, prepare the crumbed chicken breast (if making from scratch or optional lilydale store bought option). Whisk eggs in a medium-sized bowl. On a separate plate, lay out the bread crumbs. Place each chick strip in the egg mixture followed by the bread crumbs, tossing to coat. Place crumbed chicken strips in a lined air-fryer. Spray with a coat of extra-virgin olive oil (spray) and then cook for 10 to 15 minutes at 200 degrees Celsius or until chicken breast it’s completely white & cooked through. 3. Meanwhile, prepare and chop vegetables of choice. Layer meal prep jars with sauce, veggies, protein of choice, and leady green, +/- cheese.
