Vanilla In a saucepan heat sugar over a medium-high heat untill sugar melts and becomes a golden amber color, this may take anywhere from 5-10 minutes. Carefully pour caramel into an 8 inch round cake pan. Tilt the pan to evenly coat the bottom of the pan. Set the pan aside to allow the caramel to cool and harden. In the meantime make the flan filling by blending remaining ingredients until the batter is a very smooth consistency. Pour the flan batter into the pan over the hardened caramel. Cover with foil. Place pan in a water bath and bake at 350°F for 1 hour. Remove from oven; let cool. Keep the flan covered; Chill for several hours for the best results and flavor. After the flan has chilled run a knife around the edges. Place a plate over the top and flip; use a torch or a hairdryer and heat the bottom to help release the flan from the pan. Remove the pan cut and serve.
