Here’s how to make them: 📝 What you need: - 230g sweet potato Mince makes 4 serves - 500g extra lean beef mince - Onion & garlic - 2 tbsp tomato paste - 1 can (400g) crushed tomatoes - 1 diced zucchini Single serve avo - 50g avocado - 50g cherry tomatoes - 20g pizza cheese - 10g light sour cream - Seasonings (salt, pepper, taco seasoning, oregano) 🔥 How to make it: 1. Bake sweet potato at 200°C for ~45 min (line baking tray as they will leak when ready) 2. Cook onion, garlic & beef mince with seasoning 3. Add tomato paste, crushed tomatoes, water, and zucchini, simmer for 30 min (doesn’t matter how much water you add - the more you put the longer you need to simmer it) 4. Mash together avocado, cherry tomatoes & red onion (add a drop of oil and salt) 5. Cut baked potato, fluff inside, fill with mince 6. Top with cheese, grill until melted 7.
