@nikittalouise1: I made these a while ago but didn’t manage to film it all properly so I have FINALLY got round to doing it again & trust me when I say you need to make this!! I always use prawns from @farmfoodsukofficial as they are so big & juicy! I got the cooked ones for the first time this time & I definitely think I prefer them to the raw ones I usually get. 100% recommend them & they are on the 3 for £12 deal for are only £4 a bag! To make two portions you will need: 330g king prawns 3 shallots or brown onion finely diced 1 tin chopped tomatoes 10 cherry tomatoes halved 2 garlic cloves minced 1 tsp mild chilli powder 1 tsp smoked paprika 1/2 tsp cayenne pepper 1 tsp coriander Pinch salt & pepper 1 @knorruk vegetable stock pot 1 tbsp tomato puree 1/2 red chilli finely chopped Juice 1/2 lime Bunch coriander finely chopped To a pan add a drizzle olive oil and the shallots then fry off on a medium heat for 5 mins. Add in the herbs, spices, garlic & cherry tomatoes and cook for another 5 mins. Add in the chopped tomatoes, stock pot, tomato puree, fresh chilli and a splash of water then bring to a simmer for 5 mins. Add in the defrosted prawns, lime juice, fresh coriander and cook for a final 10 mins. Serve with basmati rice and garnish with some fresh coriander.
