6 INGREDINENT SALAD SERIES RECIPE 18/30 FALAFEL & TABBOULEH SALAD DISCLAIMER: The 6 ingredients refer to the SALAD ingredients. The dressing ingredients are additional. This isn’t designed to trick you, I just want to help you eat a little healthier and change up your normal lunch or dinner recipe. I have a tendency to throw 14 ingredients in a salad, so was really trying to limit this to make it easier for you. Serves 4 Ingredients: 1.25 cups bulgur (cracked what) 200g cherry tomatoes, halved (punnet) 2 lebanese cucumbers, diced 1 small red onion, finely diced 1 cup parlsey, finely chopped 12 store bought falafel balls Dressing 2 tablespoons extra virgin olive oil 1 juice lemon, juice squeezed 1 tablespoon store bought or homemade hummus Sea salt and cracked black pepper Method: 1. Bring a large pot of salted water to the boil. Add the bulgur and cook for 8-10 minutes until tender. Drain, run through some cold water and set aside. 2. In a large bowl, combine the bulgur, cherry tomatoes, cucumbers, red onion, and chopped parsley. Toss them together until well mixed. Drizzle over a little extra virgin olive oil and season well. 3. Cook the store-bought falafel balls according to the package instructions. You can bake or pan-fry them until they’re golden brown and cooked through, a couple of minutes. 4. In a small bowl, whisk together extra virgin olive oil, lemon juice, hummus, sea salt, and cracked black pepper. Adjust the seasoning to taste. 5. Gently mix the dressing into the tabbouleh base until everything is evenly coated. Divide the tabbouleh salad among four plates. Top each serving with 3 falafel balls.
