@its.livb: LEMON BLUEBERRY FRENCH TOAST - plant-based and made so easily in my vitamix hehe my fav kitchen tool everrrr 🥹😍 Ingredients: 1/2 block firm tofu (approx 6 oz.) 1 cup plant-based milk 1 tsp vanilla extract 1 tsp cinnamon 8 slices of sourdough bread Blueberry Lemon Sauce: 1 cup blueberries 1 tbsp agave juice of 1/2 lemon, plus some zest Start by making the batter: add the tofu, plant-based milk, vanilla and cinnamon to a blender and blend until smooth. Pour batter into a shallow bowl. Heat a frying pan to medium heat and add some vegan butter. When it starts to sizzle, dip a slice of bread into the batter, then quickly dip the other side. Allow any excess to drip off, then place in the pan. Cook a few minutes per side until golden brown. Repeat with the rest of the bread. Meanwhile, in a small pot on medium heat, simmer blueberry sauce ingredients until reduced and thickened slightly. Set aside until ready to serve. Serve french toast with blueberry sauce and a drizzle of maple syrup (optional).
