 This Char Siu Changes Everything
 This Hong Kong-style char siu is made with perfectly marbled pork, marinated until flavorful,
 then pan-braised in a rich barbecue sauce until tender and glossy. Every slice is juicy,

 Ingredients 
 Main
 ● 2 lb (1 kg) pork shoulder or well-marbled pork (cut into long strips)

 Making Process 
 Prepare the Pork
 1. Cut the pork into long strips.
 2. Place the pork into a large bowl.
 Marinate
 3. Add the ginger.
 4. Add the green onions.
 5. Add the garlic.
 6. Add the rice and cook the wine.
 7. Add the Hong Kong-style char siu sauce. 8. Mix until every piece is evenly coated.
 9. Marinate for at least 2 hours.
 Cook the Char Siu
 10. Heat the cooking oil in a pan.
 11. Add the marinated pork.
 12. Fry over medium-low heat.
 13. Brown one side.
 14. Turn the pork over.
 15. Brown the other side until golden.
 16. Pour in the remaining marinade.
 17. Add half a bowl of water.
 18. Cover with a lid.
 19. Simmer for 10 minutes.
 20. Turn the pork over several times during cooking to prevent sticking.
 Finish
 21. Remove the lid.
 22. Increase to high heat.
 23. Reduce the sauce until thick and glossy.
 24. Remove the pork from the pan.
 25. Slice into thick pieces.
 26. Arrange neatly on a serving plate.
 27. Spoon the remaining sauce evenly over the sliced pork.
 28. Serve immediately.
