I did one a few days ago. I let it smoke for 4 hours then I wrapped it with tin foil. I sprayed apple juice and water every hour until I wrapped it.

I do both wrap and no wrap. I like it with extra bark cuz you can just pick that aside if people don’t like it. We ussaly make extra and use it for tacos the next night. 180 then wrap. Pull at 207

I don’t wrap mine on the pellet grill. Bump the temp up to 210-220 to finish. Pull it off when the internal gets to 205. Comes out great every time!

I usually cook it til it's 160 internal at 275 for the first 4 hours then wrap it up and bump the temp up to 300 or so til it reaches 205
