RAMADAN FROM AROUND THE WORLD 🌙 A warm welcome back to Ramadan from around the world! This is part 2 and today we’re taking a trip to Somalia, to make a rich beef stew called ‘Suqaar’. Full recipe below ! (2) 500g diced small sliced beef 1 tbsp ghee 1 brown onion diced 3 cloves garlic minced 6 curry leaves (optional) 1 tsp smoked paprika 2 tsp curry powder 1 tsp ground cumin 1/2 tsp ground turmeric Salt & black pepper to taste 650ml beef stock 1/2 red bell pepper diced 1/2 green bell pepper diced 1/2 yellow bell pepper diced 1/2 cup coriander chopped Malawah: (Somali pancakes) 1/2 tsp ground cardamon 1 egg 1 cup whole milk 1 cup plain flour 1 tbsp sugar 1 tsp salt 25g butter Vegetable oil Heat up a large pot on a medium high heat. Once hot, add the beef and brown for a few minutes. Add your diced onion & garlic. Season with salt and pepper then cook for 5 minutes. Now add the spices and cook for a few minutes.
Add the beef stock, bring to a simmer, cover and cook for 1hr 30 minutes. Then remove the lid, add the diced bell peppers and cook uncovered for a further 5 minutes, then finish up with the chopped coriander, then set aside. To make your Malawah, combine all the ingredients in a large bowl (apart from butter) and mix until well combined. It should be smooth and runny. Heat up a skillet or non stick pan and add your butter, once melted slowly add a ladle of your mixture into the centre of the pan. Mix in a circular motion until you can see through the crepe. Cook for a minute, then flip, cook for a further minute then remove. #stew #comfortfood #somali #Ramadan #ramadanrecipes
