Join me and GLAD in helping Canadians reduce waste, cut methane emissions, and save resources! #ad  Fall Quinoa Salad Jars  Makes 4  Ingredients  Roasted Sweet Potato  2 medium sweet potatoes, peeled and diced into 1 inch thick cubes  1 tbsp olive oil  ½ tsp cinnamon  1 tsp kosher salt  Few cracks black pepper  1 tsp paprika  1 tsp garlic powder  1 tsp onion powder Kale Salad  2 medium apples, chopped into cubes  1 bunch kale, washed and chopped  1 medium cucumber, chopped  ½ cup dried cranberries  ½ cup pecans  Jars  1 box quinoa  1 handful basil, chopped  1 handful chives, chopped  ½ cup feta, crumbled  Maple Balsamic Dressing  1 cup olive oil  ½ cup balsamic vinegar  ½ tsp salt  Few cracks black pepper  1 tsp dijon mustard  1 Tbsp maple syrup  Directions  Roasted Sweet Potato  Preheat oven to 400F degrees. Line baking sheet with parchment paper. Add diced sweet potatoes into baking sheet with olive oil and seasonings. Mix until evenly tossed. Roast for 40-45 mins, flipping potatoes half way. Once cooked set aside.  Kale Salad  Combine all ingredients in a large bowl. Mix together until tossed. Set aside.  Quinoa  Bring 2 cups of salted water to boil. Cook quinoa according to box instructions. Let cool and set aside once cooked.  Salad Dressing  Combine all ingredients into a large measuring cup and mix together until combined. Set aside.  Assembly  Assemble four large mason jars and assemble each the following way by evenly distributing the ingredients: salad dressing, followed by quinoa, kale salad, fresh herbs, sweet potato, feta and repeat until all jars are filled.  Store mason jars in the fridge until needed. Serve and enjoy! To eat, simply eat right out of the jar by shaking the jar until ingredients are mixed and coated with dressing OR empty the contents of the jar out into a salad bowl!
