To prevent having to find another recipe to use up a can of soup, I made a small portion from scratch for my tater tot casserole! Here’s the homemade, small portion cream of mushroom soup recipe: ½ TBSP Butter ½ c mushrooms, diced ½ TBSP flour ¼ c chicken broth ( I used 1/4 tsp of bouillon and ¼ c water) 1/8 c half and half Pepper ¼-1/2 tsp onion powder ¼-1/2 tsp garlic powder   In pan on medium/low, melt butter. Add in mushrooms, saute for 3-5 minutes. Once mushrooms release their water, add in flour and stir. Let cook for at least a minute to get out the raw flour taste. Add in stock. Whisk together until a paste is formed. Slowly add in half and half while continuously stirring. Once well combined, add seasoning. Let all flavors marry together, stirring occasionally for another 3-5 minutes. If you want the consistency thinner, slowly add more water. #condensedsoup #creamofmushroom #cookingforone #smallbatch #leftovers
