Google the brand of the knife. manufacturers usually have specific angles for their knives. worked at a knife store and had a packet full of them

Just use a marker and color the edge. And if the color doesn’t disappear from the marker. You’re doing the wrong angle.

So I take a permanent marker and mark across the blade if it takes it off to the edge with a swipe or 2 you know you got it right

I color the blade edge with a sharpie if I'm not sure what angle it is. Makes it super easy to get the exact angle when you take a few swipes to see how much sharpie is removed.
