Here at this restaurant, “miso” is their namesake and their menu proves it. Featuring various types of miso like Kome, Shiro (white), and Mame (Red) from Japan, they serve ramen in different regional styles to go along with the choice of miso. When I visited for the first time, I was mesmerized at their options to choose from. 📍Misoya Ramen 535 Hudson St, New York, NY 10014 For starters, I ordered the Black Pepper Tuna and the Fried Shishito Peppers. For the long-awaited ramen, I ordered their specials: Goma Tan Tan Ramen and the Miso Curry Katsu Ramen.  The Black Pepper Tuna, which was seared tuna sashimi coated with black pepper (au poivre-like) and served with mustard sauce was a great start. The tangy and mildly spicy sauce, together with the black pepper crust really played well with the medium fatty tuna. The Fried Shishito Peppers were served with Yuzu Pepper Mayo — the spiciness got my appetite all riled up for the main dishes. The Goma (sesame) Tan Tan Ramen was made with shiro (white) miso and sesame paste based soup that was topped with ground pork, bean sprouts, scallion, miso-boiled egg, and homemade chili oil. The red chili oil on top scared me for a bit but the flavor was just mildly spicy. The shiro miso was mildly sweet yet surprisingly light, so this was an entertaining play of sweet and spicy flavors. Plus the umami bursting out made slurping noodles extra fun.  The Miso Curry Chicken Katsu Ramen caught my eye because most establishments serve just a “curry” ramen, not based on miso, shio, or tonkotsu base. The curry flavored miso tasted like a mix of the kome and the mame miso plus curry. Each slurp was just as alluring as the first, and together with the chicken cutlet slices, this was a hearty flavor-packed dish. I really enjoyed having ramen here.
