You wouldn’t refinish butcher block! Just sand it. A butcher block should be unsealed wood - just food grade mineral oil to rehydrate the wood and prevent cracking.

As a cook, I hated my tile countertops nothing is harder to clean. There were always crumbs in the cracks.

It’s a great kitchen! Those cabinets and the tile are probably from an early 1980s renovation, not original. But still very nice.
