Return the skillet to the heat (DO NOT CLEAN THE SKILLET, you want the crispy bits to flavor the mac and cheese). Melt butter with 1 Tbsp of the reserved bacon fat. Add flour and cook over medium heat for about 3 minutes. Add the spices and saute until fragrant. About 30 seconds. Whisk in Carnation Evaporated Milk. Cook over medium heat until slightly thickened. About 5 minutes. 4. Turn the heat to low. Add the cheeses handfuls at a time reserving about 1/2c for topping. Whisk until the cheese melts into the sauce. 5. Fold the cooked macaroni into the cheese sauce until coated. Stir in the crispy bacon reserving a little bit for the top. Pour into the prepared skillet. Top with the reserved bacon bits and cheese. Bake for 15-20 minutes until nice and bubbly. Sprinkle fresh minced chives over the top before serving. Be sure to tag us if you make it 😉
