A plate of green Blistered snap peas with pea shoots and dukkah  Ingredients: 1 lb Snap peas Pea shoots if you have them 1/2 cup toasted pistachios  1 tsp ground coriander 1/2 tsp cumin 1/2 tsp Aleppo, or chili flakes Zest from 1 orange+ the juice Juice from 1/2 a lemon or around 2 tbsp Salt to taste Directions: For the dukkah, lightly dress your pistachios in oil and toast in the oven at 325f°/ 162°c for 8 minutes. Transfer them to a new tray to cool.  Once they’re cooled completely give them a rough chop and add the coriander, cumin, Aleppo, and orange zest. Taste and adjust the salt, I like to add a pinch of flakey salt for texture. Reserve  For the snap peas if you feel like it you can remove the stringy bit by sliding your knife underneath it and lifting it away, it pulls away kind of like a zipper. Not necessary but it won’t get stuck in your teeth later.  If you have pea shoots I like to pick the larger leaves towards the bottom and add those in to the pan,  and use the more tender tips as a salad situation.  Preheat a sauté pan over medium heat. Add a couple tablespoons of neutral oil, once it shimmers and begins to smoke add the snap peas and a pinch of salt. Then just let it sit for a couple minutes to let them blister really hard on one side. Once you have nice color, add the pea leaves and another tiny pinch of salt. Squeeze over the orange and lemon juice and toss. Once the pea leaves wilt remove from the pan. Top with dukkah and serve #tiktokfood #foodtiktok #tiktokcooks
