@kristysketolifestyle: High Protein Chicken Cordon Bleu Casserole I made this for lunch and it was quick and easy! It could easily be doubled or tripled to make it family sized. 🙌🏼 RECIPE - Makes 2 servings INGREDIENTS: 1 & 1/2 cups shredded rotisserie chicken 3 oz cubed ham salt & pepper to taste 1/2 cup blended Good Culture cottage cheese 1 Tbsp Dijon mustard 4 slices of ultra thin Swiss cheese DIRECTIONS: 1. Preheat oven to 375 degrees Fahrenheit. 2. Grease a small baking dish. 3. Add the chicken into the dish followed by the cubed ham. 4. Season with salt and pepper to taste. 5. In a small bowl, stir the mustard and cottage cheese to combine. 6. Pour over top of the chicken and ham and spread it out evenly. 7. Place the 4 slices of ham over top and bake for 24 minutes. *Broil for the last 2-3 minutes if you wanted it browned and crispy a bit.
